Cheesy Baked Microgreen Frittata

Ingredients
1/4 cup Microgreens
1 Egg
2 Egg whites
2 teaspoons Milk
2 tablespoons Grated hard cheese of your choice (divided)
Salt & Pepper to taste
Butter to grease the baking dish
Optional mix-ins such as:
Sauteed peppers
Sauteed onions
Sauteed mushrooms
Bacon bits
And/or smoked salmon

Step by Step Instructions
  1. Place a 1 cup ramekin or similarly sized baking dish onto a baking sheet and into the oven. Preheat to 425 degrees.
  2. Whisk the egg, egg whites, milk, and 1 tablespoon of cheese together.
  3. Season the mixture with salt & pepper, then stir in the microgreens.
  4. Remove the heated dish from the oven and carefully grease it.
  5. Add the egg mixture to the dish and top with the remaining tablespoon of cheese. Bake for 15 minutes.
